Easy pasta side dish
- 1 brown onion, (quartered)
- 1 garlic clove, (or less/more if preferred)
- 5 sprig parsley, (about a small handful)
- 5 leaves fresh basil, (or less/more if preferred)
- 1 carrot, (in 2cm pieces)
- 1 zucchini, (in 2-3cm pieces)
- 15 g extra virgin olive oil, (or 1 TBSP; regular olive oil is fine)
- 350 g water
- 1 can coconut cream, (400ml; about 380g - 400g)
- 1 tablespoon Vegetable stock paste, (or less to 1tsp, but not more than 1 TBSP)
- 250 g dried spiral pasta

- Step 1. Prepare as per ingredient list and add to bowl: brown onion, garlic, parsley, basil, carrot and zucchini. Chop 4 seconds / speed 7. Scrape lid/sides of bowl with spatula.
- Step 2. Add extra virgin olive oil. Cook 2 min / 120°C / speed 1.
- Step 3. Add water, coconut cream and vegetable stock paste. Cook 5 min / 100°C / speed 1.
- Step 4. Add dried spiral pasta. Use spatula to push down pasta until all submerged. Cook 11 min / 100°C / "Counter-clockwise operation" "Gentle stir setting" .
- If prefer softer, add another minute or two when cooking is complete. Will thicken if left to sit for a few minutes after serving. Makes about 1.5L.
Tip
This turns out like a packet pasta dish, but is dairy free. Method was inspired by the Creamy tomato and salami fettuccine in the Basic cookbook.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

melanie-jade: Thanks for the feedback. I have added one minute to the cooking time instructions, so the pasta is still on the firm side, but hopefully works better as a baseline.
Most of the family liked this one, I loved it! Only thing, I did cook a little longer but there was still a lot of sauce. It would be perfect to chuck in a tin of salmon at the end. I used 1 Tbsp chicken stock paste. Thanks for a good recipe that makes a great side dish and has veggies in it to boot!
