Ingredients
Hidden veggie sauce
- 450 g sweet potato, peeled and diced
- 2 cloves garlic
- 2 carrots, chopped
- 40 g baby spinach
- 1 zucchini, chopped
- fresh basil, to taste
- Oregano, to taste
- 1 onion
- 400 g can of tomatoes
- 1-2 tablespoons vegetable stock
- 125 g water
- 1000 g lean minced beef
- 2 heaped tablespoons tomato paste

1. Add sweet potato, garlic, carrots, baby spinach, zucchini, basil, oregano, onion to mixing bowl. Blend 10 seconds, speed 6
2. scrape down bowl, then puree 40 seconds speed 9
3. Put half the mixture in a container and keep in the freezer for next time
4. In a non stick pan add 1kg of lean mince beef and cook until brown
5.Add remaining blitzed Veggies, 400g can of tomatoes, 1-2 tblsp of vegetable stock, 125g (half a cup) of water and 2 tblsp of tomato paste
6.Simmer for 15-25minutes
7. Cook pasta or spaghetti as per packet directions, add sauce and cheese on top
8. Put in the oven 180 degrees until cheese melts

Tip
Use the other half of the hidden veggie sauce in the freezer for the next time you cook pasta bake.

This is a great recipe which my kids and husband loved
Absolutely delicious recipe. Nobody had an incling that the recipe was full of good stuff. Have added to my favourites and will definitely make again!
My fussy 2yo loved it. Fussy husband not so much but anything that can get my son to eat such a large amount of veggies is a big winner for me.

This is definitely a regular meal from now on!! So good! So easy to make and cheap!! Super yummy! Makes loads.. my 3 kids and i only ate 1/4 & thats with my daughter having seconds! !
My super fussy 8yrold son gobbled it up believing it was only meat & my veg loving 10yr old daughter who eats like a bird had seconds and could not believe it had any veg in it! HUGE THANKYOU! just a note i found it best to puree the veg in stages then together & i pureed my tin of whole tomatoes too
