Katie's Chicken Chow Mein
- 1 Whole Cooked Chicken
- 3 tablespoons ABC Sweet Soy Sauce, 2 Tbls to Marinate, 1 Tbls for Sauce
- 1 red capsicum, deseeded and sliced into strips
- 1 --- green capsicum, deseeded and sliced into strips
- 220 grams Green beans, trimmed, fresh or frozen
- 200 grams Cup Mushrooms, Peeled and thicky sliced
- 1 pods Continental Chicken Stock Pot
- 1 tablespoon cornflour
- 250 grams San Remo Egg Pasta (Egg Noodles), Cooked on the stove with boiling water
- 150 grams Roasted Cashews, optional
- 1 Egg - poached in microwave or stove top, optional

- Pull chicken apart into long small strips and place into a container.
- Add 2 or 3 Tablespoons of Sweet Soy Sauce onto chicken and place in fridge to marinate over 1 hour minimum.
- Place 900grams water into the mixing bowl.
- Place the red and green capsicum into the Varoma dish. Place the green beans and mushrooms in the Varoma tray. Place Varoma into position and cook 30 min/Varoma/speed 3
- Once cooked, set aside the Varoma with all the vegetables and empty the water from the mixing bowl.
- Place 1 cup of water into the mixing bowl.
Add into mixing bowl, 1 Chicken Stock Pot, a large dessert spoon of Cornflour and 1 Tablespoon of Sweet Soy Sauce. Cook 5 min/100C/speed 3
Optional - In the last 20 secs, just drop in the poached egg so it gets chopped up in the sauce. - Place all cooked Vegetables into a bowl. Add the marinated chicken from the fridge and the Cashews. Pour over the sauce from the mixing bowl and mix all together with a wooden spoon.
- Serve on a bed of Egg Noodles.

I made this for dinner tonight but made my own adjustments to the recipe. I left out the mushrooms and cashews. I put the beans, thinly sliced carrot, thinly sliced celery and some chopped wombok in the varoma dish. Satueed some roughly chopped onion and garlic in a pan then added those to the veg in the varoma dish. The sliced capsicum went into the varoma tray. I cooked the veg for 15 minutes rather than the 30 minutes in the recipe, and they were cooked perfectly. I think it would be a bit bland without garlic, onion and celery.
