Ingredients

Bacon Jam

  • 2 cloves garlic
  • 300g short cut bacon cut into quarters, trim ALL fat
  • 1 large onion, peeled and halved
  • 20g olive oil
  • 160g brown sugar
  • 80g apple cider vinegar
  • 60g Maple syrup
  • 1 Tbsp instant coffee, dissolved in 3 Tbsp boiling water
  • 2 tsp smoked or sweet paprika
  • ½ tsp cinnamon, ground

Recipe's preparation

    Bacon Jam
      1. Place garlic, onion, bacon and oil in TM bowl and chop 3 sec / speed 5.
      2. Scrape down and cook 10 mins / Varoma / speed soft / Reverse.
      3. Add remaining ingredients and cook 10 mins / 100°C / speed soft / Reverse.
      4. Cook a further 10 mins / Varoma / speed soft / Reverse / MC off placing simmering basket on TM lid to prevent spatter.
      5. Pour into sterilised glass jars. Store in fridge (up to 2 months).

     

    TM5 users where Varoma temperature is stated, use 115°.

Tip

Optional additions: 1 Tbsp seeded mustard; or ½ tsp chilli flakes; or 20g dried cranberries (good served with Christmas roast meats).

I have a coffee machine so I use 2 double shots each with 25ml water. The coffee taste is not at all obvious, it just adds more depth to all the other flavours.

This is the most amazing jam and can be used with so many things.  For example:it will turn your humble burger into a gourmet burger,

  • boring sandwich fillings get a lift,
  • bake it on top or in the middle of your meatloaf,
  • inside your toastie with melted cheese,
  • a tasty sauce to eat with your omelette,
  • with your breakfast scrambled eggs,
  • as part of a party charcuterie or cheese platter,
  • as a finger food spread on crackers with cream cheese,
  • or fill small tart or vol au vent cases,
  • serve alongside roast meats,
  • BBQ meat condiment,
  • on top of a T-Bone steak,
  • on top of baked potatoes,
  • as a pizza base sauce.

    Made yesterday. Amazing! Made Fructose Friendly by substituting the following things - garlic oil in place of garlic and oil, leek in place of onion, coconut sugar in place of brown sugar, Queens sugar free maple syrup in place of maple syrup. Tastes so good, kids keep eating it!

    I've just made this (with extra 50g of bacon, and extra 15 g coffee) but other than that - to the letter. It is still runnny - and I mean like liquid. When it finished cooking it seemed like bacon in a coloured liquid - no thickening at all. It's been cooling a couple of hours now and doesn't look much better. Will it continue to set? Should I cook it more until it reduces?
    Any other suggestions?

    Yuuuummm 😋😋 I just made this with left over maple glazed Christmas ham and wow! It’s so yummy! Also I used the TM5 veroma speed (125*) coz I didn’t really that tip at the bottom. It’s still fine but a little burnt bit on the bottom of the bowl but didn’t effect the taste at all

    Will be delish in rolls with left over ham and salad or with cheese and crackers tmrc_emoticons.) can’t wait!

    Help! I just made this for Christmas gifts, followed the recipe exactly but its so runny and watery! Will it thicken when it cools or what can I do to save it?!!!
