Rocket, Cashew and Parmesan Chunky Dip
- 2 cloves garlic, peeled
- 65g Parmesan cheese., cubed
- 120g Unsalted Cashews
- 60g rocket
- 10g basil, fresh
- 30g white vinegar
- 50g olive oil
- 1 red chilli, deseeded
- half juice of lemon
- Thai Seasoning jar, generous sprinkle

- Enjoy dip with crackers!

Tip
I have also added Kale to it - combination of basil, rocket, and kale I did successfully up to 100g in total. If mix is too try just add more oil.

This is incredible and so easy! I put in extra garlic because well, yolo. I think if you added some herbs, it would be exactly like the Grill'd herb mayo.

Holy Easter Saturday! I just made this for a BBQ tonight - and it's amazing! I added a green chilli and some red chilli flakes - it given it a great kick. I think it needs all the lemon and vinegar - delicious - will be on HIGH rotation! Oh and I used organic macadamias also as I had no cashews!

This dip had a nice texture and was easy to make. The batch size was quite large. Taste wise, I found this dip to be a bit too lemony/vinegary. Thanks for the recipe.
Really yummy and quick to make, I used a combo of baby spinach and rocket (80/20 ratio, didn't weigh exactly!) and only had lemon infused olive oil, so didn't put any lemon juice. was perfect. Thanks for converting the recipe, I hate paying so much for these dips but loooove eating them so much!
