Ingredients
- 500 g potatoes, peeled and halved
- 1 onion, peeled and halved
- 2 eggs
- 2 tbsp mint leaves
- 1/4 cup feta, crumbled
- 1/4 cup plain flour
- 4 tbsp olive oil
- parsley, mint, lemon wedges, to serve

Place potatoes, onion, mint and a little salt into TM bowl and grate for 3 seconds on speed 8
Place mixture in steamer basket to drain for 15 minutes
Place eggs in TM bowl and beat for 3 secs in speed 8
Squeeze excess moisture from potato mix and place in TM bowl
Add feta, flour, salt and pepper, and mix for 10 seconds on speed 1.
Heat oil in a large frypan
Add 2 tbsp of mixture per pancake to the pan and squash to make flat pancakes.
Cook on both sides until golden brown.
Serve garnished with fresh parsley, mint and a dues edge of lemon
Tip
Cook up in smaller size for cocktail hour nibbles

These were pretty good. We cooked them on the barbeque. I think they would be better if they were cooked as per the recipe - in a frypan. I imagine they would be crispier in the frypan.
I used 100g feta and 35g plain flour, and used a combination of white potato & kumera (sweet potato).
I will definitely be making these again

These were easy and yum! I used normal cheddar cheese and a red onion because it was all I had...... My children ate the lot!

I loved this recipe. It was easy, and a nice difference to normal potato cakes. The husband liked them too, which is always a bonus.
I added double feta, and extra salt and pepper seasoning.
