Ingredients

Cauliflower, Zucchini & Leek Soup with bacon dust & Goats cheese

  • 2 onion, peeled and cut in half
  • 3 cloves garlic, peeled
  • 30 g olive oil
  • 2 teaspoons TM vegetable stock concentrate
  • 900 g water
  • 350 g cauliflower florets
  • 350 g Zucchinis, Peeled if you dont want a green soup
  • 1 leek, White part only
  • 1/4 teaspoon black cracked pepper, to taste

Soup Topping

  • 6 rashers of short cut bacon
  • 40 g goats cheese, crumbled

Recipe's preparation

    Soup
  1. Place onion and garlic into TM bowl and chop 1 sec / speed 7, scrap down the sides.
  2. Add oil, saute 3mins/Varoma/Speed 1
  3. Add water and stock. Place all veggies into theTM basket, insert basket and cook for 20mins/Varoma/Speed 3.
  4. Empty veggies from basket int the TM bowl with the water and stock, puree for 1 min ( gradually increasing speed) from speed 1 to speed 9.
  5. Transfer soup into Thermoserver to keep warm until ready to be eaten. (Thermoserver will keep the soup warm for atleast 1.5 hours).
  6. Soup Toppings
  7. cook bacon any way you like until crispy and brown but not burnt.
    (You could grill bacon, oven bake, cook in fry pan)
  8. Once cooked pat down with paper towel and allow to cool.
  9. place in bottom of thermomix with MC on speed 7, 10 seconds. Check if it is fine enough and repeat until desired consistency
  10. sprinkle bacon dust and goats cheese over soup and serve immediately

Tip

you may like a little more goats cheese, depending on the strength. Also good without the baocn dust and goats cheese but i think its just a bit more special with it!

    YUM! this was one of the first things i made in the themie and oh em geeee, so good! i let everyone add their own goats cheese and bacon dust to adjust for personal preference - everyone loved it! THANKS
