Ingredients
Chinese Chicken and Corn Soup
- 4 skinless chicken thigh fillets, (500g)
- 15g ginger, sliced into discs
- 2 garlic cloves
- 700g water
- 1T chicken stock paste
- 1T soy sauce
- 1T chinese cooking wine
- 1 420g creamed corn
- 1tsp cornflour, (mixed with one tablespoon of cold water)
- 1 Pinch Pepper
- 1 egg, whisked
- shallots, (optional)
- drizzle of sesame oil over finished soup, (optional)

- Place chicken thigh fillets flat onto tray and dish of varoma and set aside.
- Add ginger and garlic to bowl and mince for 5 seconds, speed 5, MC on. Scrape down bowl. Add water, chicken stock paste, soy sauce and Chinese cooking wine to bowl and place varoma with chicken thigh fillets onto lid. Cook for 20 minutes, varoma temperature, speed 3, using steamer basket instead of MC.
- Remove chicken thigh fillets from varoma and cut into large pieces.
- Pour liquid into a separate bowl and set aside. Add chicken thigh fillets to Thermomix bowl and shred for 5 seconds, speed 4, Reverse"Counter-clockwise operation" . IF YOU HAVE A SECOND BOWL SET, USE YOUR SECOND BOWL TO SHRED THE CHICKEN, LEAVING YOUR LIQUID IN THE FIRST BOWL. Scrape chicken down into the bowl with a spatula.
- Pour reserved liquid over the shredded chicken and add the can of creamed corn, cornflour slurry and pinch of pepper. Cook for 6 minutes, 100 degrees, speed 1, Reverse "Counter-clockwise operation" , using steamer basket instead of MC. WITH ONE MINUTE OF TIME REMAINING, remove steamer basket and slowly pour the whisked egg through the hole in the lid.

Tip
OPTIONAL - serve with the chopped green ends of shallots sprinkled over the soup.
A drizzle of sesame oil over the finished soup adds a little something extra!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
