Ingredients

  • 1400 g water, (to cook chicken then discard)
  • 300 g chicken breast
  • 2 onions, (peeled and cut in half)
  • 4 rashes bacon (remove fat)
  • 30 g oil
  • 3 carrots, (roughly chopped)
  • 1 Large Sweet Potato, (roughly chopped)
  • 200 g Celery, (sliced 2cm pieces)
  • 6-8 sprig Thyme
  • 2 bay leaves
  • 200 g button mushrooms, (sliced)
  • 1 tablespoon plain flour *
  • 2 tablespoon chicken stock
  • 1 litre water, (for the stew)

Recipe's preparation

  1. 1. Weigh in water in bowl. Place chicken in basket and then into bowl. Cook for 20mins, 100C on spd 3.5 to 4.

    2. Remove basket and discard water. Place chicken in bowl and shred on spd 6 for 3 secs. Set aside.

    3. Place onions in bow. Chop spd 7 for 3 secs.

    4. Add bacon and chop spd 6 for 3 secs. Repeat if necessary.

    5. Add oil and saute for 4 mins, 100C and spd 1.

    6. Add carrots and chop on spd 5 for 2 secs.

    7. Add sweet potato and chop spd 5 for 2 secs.

    8. Add pre-sliced celery, bay leaves, thyme, mushrooms, stock and water. Before you cook mix contents on Reverse and spd 3 for 2 to 5 secs. Cook for 20mins, 100C, Reverse and spd 1.

    9. Add chicken and flour. Mix on spd 3, Reverse for 3 secs. Cook for a further 10 mins, 100C, Reverse and spd 1.

    10. Serve.

Tip

*The bowl is quite full but will reduce slightly after cooking.

*If you like it thicker consistency, then add another 1 or 2 tablespoons of flour.

    Great recipe thank-you, made 4 large portions.

    Even with 3 tablespoons of flour this didn't thicken enough for me to call a stew although it may thicken overnight? Might add gravy granules next time. 

    It would help if the 2 x water detailed in the ingredients list had written next to it which amount is for cooking the chicken and which one is for adding to the stew.

    Looking forward to eating again tomorrow.

    I made this yesterday.... Was so delicious, and a cheap meal too!  Made two serves for a friend in hospital, and still fed our family of six with the remainder.  Just added some rice to make it go further.  New favourite!
