Ingredients
Soup
- 1 litre chicken or vegetable stock
- 4 --- pears, peeled, cored and quartered
- 4 --- Sweet Potatoes, peeled and roughly chopped
- 1 --- onion, peeled and halved
- 3 --- leeks, white part only, washed and roughly chopped
- 3 --- eschallot peeled, halved
- 4 level tablespoons ginger, fresh, peeled and chopped
- 3 sticks Celery, chopped
- 1 level tablespoon olive oil
- --- Salt & Pepper to tasta
- 130 grams yoghurt plain, low fat
- pickled ginger, to garnish

Place onion, celery, leeks, eschalots and ginger into bowl. Blitz 3 sec, speed 7. Scrape down.
Add oil and saute 6 min, Varoma temp, speed 1.
Add sweet potato. Blitz 5 sec, sped 6. Scrape down.
Reserve some pear to dice for garnish, add the rest with stock.
Place simmer basket on lid to prevent spatters.
Cook 25mins, 100 C, speed 1.
Season to taste with salt and pepper, puree soup by slowly taking speed up to 10, 40 secs.
Chill. When cold, whisk in yogurt.
Or if serving hot, whisk in yoghurt and gently reheat.
Top with a small dot of extra yogurt, a slice of pickled ginger, and some diced pear.

Very yummy. Omitted leeks and eschalots, used only 2 pears and 3 small sweet potato. Used 60g of fresh ginger and a tablespoon of vegetable stock with 500mL of water. Turned out nice and thick. Thank you!
