Ingredients

Pumpkin and Bacon Soup

  • 1200 gram pumpkin, Peeled
  • 1 onion
  • 4 rashers bacon, or 8 Shortcuts
  • 1 heaped tsp ground cumin
  • 1 litres Chicken Srock
  • 20 grams olive oil

Recipe's preparation

    Method
  1. Place large pumkin (I use about 1/2 a JAP) in the microwave for 2 minutes before peeling and chopping up. It is heaps easier to peel and cut this way.
  2. Place onion and bacon into thermomix bowl Closed lid"Closed lid" and chop on speed 5 for 5 seconds until roughly chopped.
  3. add oil and saute 4 minutes at speed 2 - 120c
  4. add Cumin and Saute again 1 minute at speed 2 - 120c
  5. Add Pumpkin and enough Chicken Stock to cover the pumpkin and just up to the max line and set to 100c for 25 minutes or until pumpkin is tender.
  6. Making sure lid and MC are on at speed 6 blend the ingredients for 20-30 seconds. Enjoy!
  7. Garnish
  8. Serve with cream or sour cream, and a few drops of lemon juice or a small amount of sweet chilli sauce. Black pepper to taste.
