Ingredients

Spice Mix

  • 2 teaspoons sumac
  • 1 teaspoons Grated Parmesan Cheese
  • 2 teaspoons onion salt
  • 1 teaspoons garlic granules
  • 1 teaspoon dried mixed herbs
  • .5 teaspoons salt

Dough

  • 55 grams Parmesan cheese
  • 90 grams Cheddar or Tasty cheese, Or any hard cheese similar
  • 200 grams plain flour
  • 125 gram ice water
  • olive oil spray

Recipe's preparation

    Step 1
  1. Mix spice ingredients thoroughly in a small bowl.
  2. Preheat oven to 170c and line baking trays.
  3. Add all the dough ingredients to your thermomix bowl Closed lid"Closed lid" and then on dough setting knead Dough mode"Dough mode" for 3 minutes
  4. Divide dough into 4 pieces and wrap them individually to stop them drying out with plastic wrap.
  5. Place one piece of dough between two sheets of baking paper and roll out to 2-3mm thick (flipping the dough and adjusting the baking paper to ensure the dough is even).
  6. Slice the dough into shapes, the dough will shrink when baking up to 30% so make the dough shapes larger than you think they should be.
  7. Arrange the biscuits together just so they are not touching or if using a roller cutter slightly stretch the dough onto the tray (you can snap them apart when cooked).
  8. Spray the biscuits with Olive Oil Spray and sprinkle the spice mix over coating fairly generously until evenly covered.
  9. Bake 15 minutes until crisp and brown.
