Ingredients
- 1 level tbsp fennel seeds, whole
- 1 tablespoon pumpkin seeds
- 1 brown onion
- 1 Medium fennel bulb
- 750 grams butternut pumpkin, Peeled and cubed
- 1 Granny Smith Apple, Cored and cubed (skin on)
- Salt and pepper, To taste
- yoghurt plain, To garnish
- 1 tablespoon olive oil
- 2 tablespoons vegetable stock
- 600 grams water

1. Dry roast fennel and pumpkin seeds at Varoma temperature for 5 mins on speed 1. Remove from TM bowl.
2. Place onion, fennel and apple in TM bowl and chop on speed 5 for 2 secs. Sauté with olive oil for 5mins, 90 degrees, speed 1.
3. Add pumpkin and vegetable stock. Cook at 100 degrees, speed 1 for 15 mins.
4. Blend for 30secs turning slowly to speed 8.
5. Serve with plain yoghurt, pumpkin and fennel seeds as a garnish.
