Ingredients
- 3 clove garlic
- 1/2 red onion
- 20g coconut oil
- 60g Shredded or Desiccated Coconut
- 900g Pumpkin (Roughly Chopped)
- 25g chicken stock paste
- 600g water
- 1 tablespoon red curry paste
- 2 cups of shredded kale
- sesame oil to coat kale
- sesame seeds for sprinkling
- coconut yogurt or greek yogurt (optional)

1. Place oven on 180C.
2. Shred kale with hands and spread over tray. Lightly coat with sesame oil and sprinkle with sesame seeds. Bake for 20 to 30 mins or until crunchy and still green, not brow.
3. Place garlic and onion in bowl. Chop for 3 secs on spd 7.
4. Add coconut oil and saute for 4 mins, MC off, 120C and spd 1.
5. Add shredded coconut and water. Blitz on spd 9 for 2 mins.
6. Add pumpkin, chicken paste, curry paste then cook for 20mins, 120C on spd 1.
7. Blitz on spd 9 for 1 min.
8. Top with kale and coconut yogurt and serve.

*Extras can be frozen.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
