- 130 gram gram flour / chickpea flour, raw dried chickpeas milled in TM
- 4 tablespoon natural yogurt
- 1 + 1/2 teaspoon ginger fresh, bottled ginger paste or fresh ginger crushed
- 1 + 1/2 teaspoon garlic, fresh crushed or bottled
- 4 tablespoon coriander leaves, fresh, finely chopped
- 12 pieces fresh curry leaves
- 3/4 teaspoon cumin seed
- 3/4 teaspoon hot chilli powder
- 1/4 teaspoon tumeric powder
- 1 teaspoon Baking Power
- 1/2 teaspoon tartric acid
- 1 large onion, thinly sliced
- oil, deep frying

Slice a large onion into thin rounds and leave in a bowl with lightly sprinkled salt.
Mill dried chickpeas until it is fine powder, weigh the chickpea flour.
Into the flour add the 4 tblsp natural yougurt and add 4 tablespoons tap water.
Add garlic,ginger, cumin seeds, chillie powder, tumeric powder, curry leaves and chopped coriander. until batter has formed.
Fold the batter into the bowl of onions mix to coat onions, add 1/2 teaspoon tartric acid and 1 teaspoons baking powder and mix again.
Deep fry on medium heat by dropping spoonfuls into hot oil, reduce heat slightly so that batter cooks inside and drain on paper towel, serve with sweet chillie sauce.

Tip
If the dough is too thick add a little more water until its plyable but not runny, the onion and salt combined will also have water in it so be careful not to add too much water.
