Ingredients

Beetroot & Chocolate cake

  • 250 g Raw beetroot, peeled and quartered
  • 100 g dark chocolate, broken into pieces
  • 30 g cacao powder, raw
  • 100 g Medjool date
  • 120 pieces Butter, cubed
  • 0.5 cup coconut flour
  • .5 level tsp bicarbonate of soda
  • 1 level tsp baking powder
  • 6 eggs

Recipe's preparation

  1. Pre heat oven to 180
    Prepare a slice tin or small cake tin, grease and line

    Add beetroot and chop 10 sec/sp 6. Set aside.
    Add chocolate and cacao powder and chop 10 sec/sp 8. Set aside
    Add dates and chop until shredded, 5 sec/sp 7. Set aside.
    Add butter and melt 2 mins/70/sp 2.
    Add eggs, mix 10 sec/sp4.
    Add back in beetroot, chocolate and dates. Mix 5 sec/sp 4, until well combined. Scape down sides.
    Add coconut flour, baking powder and bicarb soda. Mix 30sec /sp5

    Pour into prepared tin, cover losely with foil and place in oven.
    Check after 25 mins.
    Reduce temp to 160, Remove foil and bake for a further 5-10 mins, depending on the size tin you use, until skewer comes out clean.
