Ingredients

Dough

  • 100 g buckwheat grains
  • 300 g water, warm
  • 1 sachet dry yeast, or 1 teaspoon
  • 1/2 teaspoon salt
  • 500 g pack of Lucake "Easy Bakers" gluten free flour, tried and tested
  • 20 g olive oil
  • 2 eggs
  • 1 tablespoon apple cider vinegar

Recipe's preparation

    Gluten Free Foccacia
  1. Mill the buckwheat 10 secs./speed 10. Add the rest of the ingredients and mix 15 secs/speed 4 or until well combined. 

     

  2. Pour into a lined baking dish and smooth out. Sprinkle with extra sea salt and drizzle with olive oil. 

     

  3. Place into an oven at 50°C for 20-30 minutes then turn the oven to 220°C and bake for 20-30 minutes or until cooked through and golden on top. 

  4. Allow to cool for 5-10 minutes then slice and serve your foccacia. 

  5. Loaf of Bread
  6. To make as a loaf pour into a well greased loaf tin and prove as above then bake instead for 30-40 minutes at 200°C. 

     

  7. Pizzas
  8. To make pizzas spread ¼ of the dough onto a lined baking tray in a circle and prove for 10-20 minutes as above. You should get 2 pizzas onto a large tray.  

  9. You can also make them rectangular, spreading the dough over two smaller trays then later cutting the pizza into squares rather than wedge slices. 


     

  10. Pre-bake the dough for 10 minutes at 200°C before topping with sauce, toppings and cheese and baking for a further 10-20 minutes. 


     

  11. Egg Free VEGAN version
  12. To make egg free use 1 tablespoon of chia seeds and grind with the buckwheat then add an extra 50g of water when mixing. 

Tip

Top with herbs and garlic or with halved cherry tomatoes for a nice treat.
