  • 130 gram Labna/Cream Cheese
  • 80 gram Butter, Chilled
  • 190 gram gluten free flour
  • 1/2 teaspoon xantham gum

Recipe's preparation

  1. Roughly cube butter and Labna/Cream Cheese and put into bowl.


    Speed 4/ 10 Seconds.


    Scrape down the bowl and repeat.


    Add flour and xantham gum to bowl.


    Speed 4/ 30 seconds.


     


    Roll in gladwrap and place in fridge for at least 1 hour.


    Its not necessary to rest but it does roll easier when chilled.


     


    Roll out (either between 2 pieced of baking paper or on a silicone mat) and line trays as desired.


    Blind bake in 180* oven for approx 15 mins.


     


    This recipe makes one large quiche or up to 16 mini tarts

Tip

Does tear easily after rolling but is very easy to patch

    How would this go without xanthum gum? It isnt tolerated well in my family. Could adding some chia help?

    This pastry ROCKS!!

    i am a new thermomix owner and I used to make this pastry in my kitchen wizz. It is soooooo much quicker and easier in the thermomix. Can't wait to use this recipe over and over and over again...happy baking!!

    This is amazing pastry. I have only had my thermie for 3 days & i made the pastry on the 1st day. Rolled it out this moring & backed individual (big) quiches. Made 4.5. Its not flaky or crumblie. Thanks you so so much. This is the reason i bought a thermie, to make quiche for myself. Im in Gluten Free Food HEAVEN....
