Ingredients

Quiche Mixture

  • 2 carrots, Roughly Chopped
  • 1 zucchini, Roughly Chopped
  • 1 brown onion, Cut in Halves
  • 1 sweet potato, Roughly Chopped
  • 6 eggs
  • 180 grams Self Raising Flour
  • 3 slices bacon, Diced
  • 200 grams grated cheese
  • dash oil
  • pinch salt
  • pinch pepper

Recipe's preparation

  1. Preheat oven to 180 degrees

    Grease mini muffin tin or regular muffin tin

  2. Place Carrot, Zucchini, Onion and Sweet Potato in TM. Chop Speed5/5Seconds. Scrape down sides.

  3. Add Eggs, Flour, Cheese, Bacon, Oil, Salt and Pepper. Mix Counter-clockwise operation"Counter-clockwise operation" Speed5/10-20Seconds, until combined.

  4. Bake 15-20mins, or until firm.

  5. Serve Hot or Cold

Tip

If mixture seems dry, add dash of milk or another egg.

You may need to turn tray in oven if they cook unevenly

This recipe will work with any of your favourite veggies, just substitute as desired

    I make these at least once a week, my teens like them reheated in the airfryer for a quick brekky. Only tweak I make is to add a spoon of stock paste instead of adding salt. I also use gluten free flour and they work perfectly. Great recipe. Thanks

    This recipe I have made twice and its amazing! I love it and have many compliments on these. I added extra bacon as my husband loves them and added the dash of milk and another egg to the mix and it works perfectly.

    I made these yesterday. Easy & delicious! 

    I left out the bacon & had some red capsicum nearing it's use by date so put it under the grill & put it in at stage 1.

    These didn't work for me.tmrc_emoticons.( Mine were too wet and are really soggy. The taste is great though so I can see they have potential. I think next time i'll have to chop the vegies in batches as they didnt chop well and I ended up over chopping which I think has added to the wetness.
