Ingredients
Vegan fetta cheese
- 100 grams whole almonds, soaked overnight
- 2 tablespoons lemon juice
- 25 grams olive oil
- 1 clove garlic
- 1/2 teaspoon salt
- 25 grams water
Filling
- 3 tablespoons chia seeds
- 3 tablespoons water
- 1 Onion, peeled and halved
- 2 teaspoons Mixed Herbs
- 6-8 sprigs fresh parsley, leaves only
- 1 carrot, peeled and roughly cut
- 100 grams walnuts, I used golden california
- 95 grams rolled oats
- 2 tablespoons tomato sauce
- 1 tablespoons soy sauce
- 45 grams breadcrumbs (can be premade in Thermomix)
- 3 sheets ready rolled puff pastry, Most brands are vegan, check ingredients
- soy milk, about 1/4 cup for brushing rolls
- sesame seeds, optional topping

Preheat oven to 200 degrees C. Soak chia seeds in water. Remove pastry from freezer to thaw.
Drain almonds, and put into bowl with all other ingredients. Blend at speed 8 for 30 seconds. Scrape down bowl and repeat. Set aside.
Put onion, herbs, parsley and carrot into mixing bowl and chop 6 seconds on speed 6.
Add walnuts and oats and chop 3 seconds speed 6.
Scrape down. Add soaked chia seeds, vegan fetta cheese, sauces and breadcrumbs and mix 20 seconds on speed 5. You may need to give it a mix with the spatula.Cut each sheet of thawed pastry in half, spread mixture onto one side of the long half on the pastry, brush edges with water and fold to enclose the filling. Brush with soy milk, sprinkle with sesame seeds and cut into desired lengths. Repeat until all mixture is used. Bake 20 mins, or until golden brown.

I love these. They got the tick of approval from my vegan friends and my fussy (non-vegan) teenager.
I would make them more often but my small family would struggle to get through them all.

These were so good. I wanted to make these for dinner, but forgot to soak my nuts overnight, so I just soaked nuts in boiling water for around 1 hour. Absolutely fabulous vegan sausage roll recipe.
This is a great recipe, and they taste great,
If you can’t wait to soak your almond nuts (called activating) you can buy a pack of activated almonds that you don’t need to soak.
I used those and turned out great. I’ll be make double next time. Ummm.

Delicious! I made this gluten free by using gf pasty, gf soy sauce and cooked rice flakes instead of oats in the recipe. Turned out perfectly. Thank you for the recipe.
