Ingredients

  • 375 grams zucchini, roughly chopped
  • 1 l onion, quartered
  • 100 grams bacon, roughly chopped
  • 120 grams grated cheese
  • 150 grams SR flour, white or wholemeal
  • 95 gram oil
  • 5 eggs
  • salt & peper to taste

Recipe's preparation

  1. Roughly slice up 100g bacon. Put into thermo & dice for 2sec speed 6. Wipe down any undiced pieces into bowl and dice again for 2 sec. This makes bacon fine so check and adjust to your liking. Set aside

     

    Roughly chop 375g zucchini and put into thermo with 1 onion quatered. Dice 3-4sec speed 5. Adjust time to suit your liking. Set aside with bacon.

     

    No need to clean bowl.

     

    Add 150g SR flour, 95g oil, 5 eggs, salt & peper to bowl. Mix 20sec speed 4.

     

    Add 120g grated cheese to bowl along with zucchini onion bacon to bowl. Mix reverse 30-40 sec speed 3. You will need to use spatular to assist while mixing.

    Pour into lightly greased dish & bake at 180 for 30-40mins OR pour into muffin trays to make mini portions and adjust cooking time. Test with skewer or until lightly browned on top

     

Tip

Adjust times to suit your liking for diced items.

Serve hot or cold.

Can be frozen after cooking.
