Ingredients

Pastry

  • 75 grams Butter, Chopped, extra for greasing
  • 150 grams plain flour, Plus extra for flouring
  • 1/2 teaspoon salt
  • 50 grams water

Filling

  • 1 portion chorizo, roughly chopped
  • 1 stalk rosemary, Leaves only
  • 1/2 portion Onion (Brown), cut into a 1/4
  • 2 cloves garlic, whole peeled
  • 15 grams oilve oil
  • 1 pinch salt and pepper to taste, I used Himilayan
  • 150 grams Milk, can use half milk half pouring cream
  • 100 grams Cheddar cheese, grated
  • 80 grams feta, Crumbed or cubed
  • 100 grams mushrooms, Chopped roughly
  • 5 pieces eggs
  • 8 pieces Florets of broccoli

Recipe's preparation

    Pastry
  1. 1: Heat oven to 180 degrees

    2: Grease quiche dish with oil or butter and set aside

    3:  Place all pastry ingredients into TM bowl and mix for 20 seconds on speed 4.

    4: add Cheddar and Mix for 3 seconds on speed 9 remove and set aside

    5: Transfer onto a thermomat or floured surface and shape into a ball, using a rolling pin roll out pastry and line the prepered dish with the pastry and set aside

    6: place onion, garlic and rosemary in TM bowl and mix speed 9 for 5 seconds

    7: Add chorizo and blend for another 5 seconds on speed 9.

    8: Add Oil and cook at 90 degrees on speed 2 for 2 minutes

    9:Pour onto pastry base and evenly spread mixture. at this point also add the crumbed feta and raw mushrooms

    10: Add eggs and milk to TM bowl, also add salt and pepper to taste (and any other herbs you may like to add at this point) mix for 30 seconds on speed 3

    11: pour mixture into quiche dish on top of the mushrooms and feta.

    12: sprinkle Cheddar over the mix and place in oven for 35-40 minutes or until golden tmrc_emoticons.) Happy Mixing tmrc_emoticons.)

Tip

Feel free to add other veggies just be careful with water content as it will make it harder to set the quiche, substitute milk for half milk half pouring cream, try a different cheese tmrc_emoticons.) use your imagination!

    This was a good basic recipe for a quiche, and great pastry, but pastry needed to be blind baked, I'll be doing it next time.  I thought the egg/milk quantity was perfect, and I used it to create my own take on the quiche. Omitted cheddar cheese and chorizo, and instead used, onion, zucchin, feta, mushrooms, red capsicu, olives and tomato, and it was delicious.

    Hi Leesbee I wanted to try your lovely looking quiche, but not too sure about how much cheddar to use in pastry?  You have listed the 100gms for the wet mixture but nothing in the pastry mixture.  Around how many grams in the pastry?  Thanks for posting can't wait to try it.   lslike
