Cupcakes

  • 300g self-raising flour
  • 210g caster sugar
  • 100g Butter, softened
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 100g Milk

Passionfruit Icing

  • 100g icing sugar
  • 1 teaspoon Butter, softened
  • 2 tablespoons passionfruit pulp

Recipe's preparation

  1. Method:
    1. Preheat oven to 175 degrees.
    2. Place all the ingredients into the TM bowl and mix for 40 seconds/speed 4 or until light and creamy.
    3. Spoon the mixture into a muffin tin lined with paper patty cases.
    4. Bake for 10-15 minutes and cool on a wire rack before icing.
    Makes 12 Passionfruit Icing:100g icing sugar1 teaspoon butter, softened2 tablespoons passionfruit pulp Method:
    1. Place the icing ingredients into the TM bowl and mix for 20 seconds/speed 4 or until smooth.

    Just made these (mini sized) and filled them with passionfruit curd - oh my just delish!!! Extremely light and fluffy tmrc_emoticons.) Thanks for sharing

    Hi Dianne, thanks for your comment. I just had a quick look at the recipe and realised that I'd left out 100g milk from the list of ingredients. (So smart thinking on your behalf.) I will amend it asap.

    Cooking 7 Have just made these cupcakes but the ingredients were very dry so ended up adding 1 mc cup of milk to the mixture. They are a lovely size. Will let you know how they taste
