Ingredients

  • 150g bacon, chopped
  • 400g tin diced tomatoes
  • 2 garlic cloves,crushed
  • 1/2 teaspoon dried chilli flakes
  • 1 tablespoon olive oil
  • 1/2 teaspoon oregano (dried)
  • Sea Salt & Cracked Black Pepper
  • 50g Parmesan cheese, cubed
  • 1 Onion, peeled and halved
  • 25g olive oil
  • 25g Butter
  • 350g Aborio Rice
  • 100g white wine
  • 1100g chicken stock
  • flat-leaf parsley, chopped for garnish

Recipe's preparation

    1. Place parmesan cheese into TM bowl and grate for 10 seconds/speed 9. Set aside. Wash and dry bowl.
    2. Place bacon into TM bowl and saute for 3 minutes/varoma/reverse + soft speed MC off.
    3. Add tomatoes, garlic, chilli, oil, oregano, salt and pepper and simmer for 15 minutes/100 degrees/reverse/soft speed.
    4. Set aside and keep warm. Wash and dry TM bowl.
    5. Place onion into TM bowl and chop for 3 seconds/speed 6. Scrape down bowl.
    6. Add oil and butter and and saute for 5 minutes/100 degrees/speed 1 MC off.
    7. Insert Butterfly. Add rice and wine and saute for 2 minutes/100 degrees/reverse/speed 1.
    8. Add stock and cook for 16 minutes/100 degrees/reverse/speed 1.
    9. Pour into Thermoserver and stir through parmesan cheese and half the arrabbiata sauce and allow to rest for 5 minutes.
    10. To serve, place into serving bowl and spoon the remaining sauce over the top and garnish with chopped parsley.

    Really, really good! I had to drain some water off 3 mins from end of cooking. The smell was just scrumptious. I added roast pork cubes & it was great. Fab recipe if you don't have much in the cupboard & so versatile. You must try this.

    Delicious. Also added courgette towards the end. Restored our hope that the thermomix could do risotto well after poor results from one of the official thermomix recipes

    Very good recipe, thoroughly enjoyed it, although I did increase the chilli flakes to 2 teaspoons - We served with a chicken breast topped with the arrabbiata sauce. Delicious!

    This is a great recipe, thanks for posting it.
    I realised when the rice had almost finished cooking, that I'd forgotten to add the stock paste. I just added the vegie stock concentrate (Basic cookbook) and added another 5 mins to the cooking time.
    And I didn't have any parmesan so I just threw in some grated tasty cheese.
    It was so delicious. Had a good, solid amount of heat, which probably made up for my stock oversight. This will become a go to for me.

    This was super easy & delicious! I added mushrooms, baby spinach & also reduced the stock quantity.
    Will definitely make again & love that you can just throw in whatever you have left in the fridge!
