Chelsea's Peach & Apple Shortcake

  • 250 g Butter, Softened
  • 150 g brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 410 g flour
  • 15 g baking powder
  • 410 g peaches, canned, Sliced lengthways to make thinner
  • 1 apple, Large (or 2 small), quartered and cored

Recipe's preparation

  1. Preheat oven to 180°C

    Line a shallow slice tray with baking paper and set aside

    Weigh in butter and brown sugar

    20 seconds speed 4

    Scrape down the sides

    Mix again 5 seconds speed 4

    Add egg and vanilla

    5 seconds speed 4

    Scrape down the sides again

    Weigh in flour and baking powder

    5 seconds speed 6

    Scrape down the sides

    3 seconds speed 6

    Press nearly all the mixture into the tin with the back of a spoon or wet hands. Be sure to keep enough of the mixture to crumble ontop before baking. Thinly slice the apple quarters and arrange in the tin (doesn't have to be precise). Then layer the sliced peaches ontop. Crumble over the remaining base mixture. Bake for 40-45 minutes or until golden ontop. Leave in the tin for 10minutes before transferring the baking paper lined slice to a cooling rack. Dust with icing sugar once cold.
