Ingredients

Wet Ingredients

  • 100 grams Butter
  • 250 grams Milk
  • 1 egg
  • 1 teaspoon vanilla
  • 2-3 ripe bananas, roughly chopped

Dry Ingredients

  • 300 grams self-raising flour
  • 100 grams caster sugar
  • 1/2 teaspoon salt
  • 80 grams choc chips

Recipe's preparation

  1. Turn oven on to 220C

    Add butter to TM bowl and melt for 2 minutes at 60 C on Speed 2.

  2. Add the milk, egg, vanilla and chopped banana to melted butter. Mix for 3 seconds on Speed 4.

  3. Add dry ingredients (except choc chips) to the wet mix in the TM bowl. Mix for 30 seconds on Speed 4-5.

  4. Add choc chips and mix for 10-15 seconds on Speed 1 using spatula to assist mixing.

  5. Use medium-sized muffin tin. Put about 1/4 cup of mixture into each cup.

    Bake for 12-15 minutes until muffins spring back when pressed in the centre.

  6. Dust with icing sugar before serving.

Tip

You can make mini muffin size and add to children's lunchboxes.

Instead of chocolate chips, add half the quantity of walnuts.

    This is my go-to banana recipe when there are a few brown ones in the fruit bowl! Kids love them. I usually get 15 muffins.

    Today I ran out of choc chips so I added a packet of fudge pieces. Highly recommend, especially warm!

    Yum. Made a few more than 12 big ones. I added choc with dry ingred and only mixed 15 secs on sp4 till just mixed. Also, baked fan oven 180deg, ended up Very light. This will be my go to recipe

    This turned out delicious.  As some others have done I put the choc bits with the dry ingredients, only mixed for 20 sec & omitted step 4.  I also only had one very ripe banana & added about 40g of coconut.  I cooked at 180 fan forced.  Thanks for sharing.
