Recipe's preparation

    Method
  1. Put butterfly in place.


    Add milk to TM bowl and heat for about 15 minutes, 90C, speed 2. 

  2. While blades are rotating at soft speed, Gentle stir setting, add vinegar and salt. Stir for 1 minute at soft speed Gentle stir setting. Solids and whey will separate.

  3. Allow to sit in bowl for 30 minutes.

  4. Line your simmering basket with muslin or cheesecloth and strain mix. You will be left with curds in the steamer basket and whey in the TM bowl.

  5. Rinse the curds with cool water moving it all the time and breaking up into small curds. Squeeze the cloth to make sure you remove all the liquid.

  6. If you want to eat straight away, you can add a small amount of cream (optional). If not eating immediately, place in an air tight container and store in the fridge.

Tip

Mix some whipping cream when serving for a creamier cheese.

Use as a base for a low fat dip - add some herbs and a small amount of olive oil and cream.

Enjoy on crackers with tomato or avocado topping.

You can use whey in baking or add to your green smoothies.

    Just made this. I was a little sceptical after rinsing but added cream and the mixture was transformed. Used skim milk / white vinegar to make.
    I added a little more salt to taste and am enjoying the creamy delicious taste.
    Thanks for an amazing recipe. So much better than store bought and way cheaper too!

    Wow mine looked like ricotta but after the rinse broke up into lots of little pieces and added cream, salt and pepper and some chives. Homemade goodness! Thank you

    Made today - wish I'd known before how simple and fabulous this recipe is! There's been a shortage of cottage cheese here in Nsw and I no longer have to miss out. Did I mention how much cheaper it is to make? One happy lady here.

    Hi just wondering if you found this was more like ricotta or just like cottage cheese? I made a batch today but used full cream milk. Maybe I should try the skim and apple cider vinegar ?

    I used light long life milk and it turned out great! I do like mine a bit saltier, so will try adding more salt next time. Made 280g cottage cheese, which was a perfect amount for a recipe I was making.
