Ingredients

  • 250 grams red lentils, washed and drained
  • 1 brown onion, small, peeled and halved
  • 1 clove garlic
  • 1/2 red capsicum, large, roughly chopped
  • 1 Carrot, small, roughly chopped
  • 1.5 celery stalks, roughly chopped
  • 1 Tomato, medium, roughly chopped
  • 1 Leek, small, roughly chopped
  • 100 grams mushrooms, sliced
  • 150 grams Green beans, sliced
  • 100 grams Sweetcorn kernels, tinned or frozen
  • 1 baby spinach, handful
  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 750 grams water
  • 1 tablespoon tomato paste
  • 2 tablespoon mixed, fresh herbs such as parsley, basil & coriander
  • salt and pepper to taste

Recipe's preparation

  1. Add onion, garlic, capsicum, carrot, celery, tomato and leek to TM bowl. Chop 5seconds, speed 5.

  2. Add remainder of ingredients to TM bowl. Place simmering basket on lid (replace MC). Cook for 35 minutes, 100C, counter-clockwise operation, speed 1.

  3. Serve with a sprinkle of parmesan cheese.


     

Tip

This is a tasty, low GI, low calorie soup great for filling that empty tummy. Make up a batch and have it on hand for whenever you need a food top up. Good to freeze so you have a bowl to take to work each day.

A serve of just over 300gms is approx 180 cals so you have a rtasty, filling soup that is also low calorie.

    Thanks for this recipe 🤩 It was absolutely delicious ! I left out the corn and forgot the spinach tho still a keeper. I made the gluten and grain free bread rolls in Cookidoo to go with it and it was a very filling meal. Made 5 generous bowl fulls.

    I'm not sure if I was supposed to add the lentils to the thermo or leave in the simmering basket but added into the bowl and it was very full. Hope I have done this right. Can't wait to try it.

    Very nourishing and satisfying. I have made it a few times and added cauli, broc, pumpkin. Any vege you need to use up will work in this soup. Delicious - thank you

    Delish! Didn't have any beans, used zucchini. Added some sumac and onion flakes. Sprinkled dried chilli on top of my serve.
