Bun Ingredients
- 250 g bakers or plain flour
- 40 g Coconut sugar, (you can use caster)
- 3 tsp dry yeast
- 1/2 tsp salt
- 160 g warm water
- 1 tsp coconut oil, (you can use any vegetable oil)
- 85 g Organic Sultanas
Glaze Ingredients
- 50 g Coconut sugar, (you can use caster)
- 110 g water
Optional Icing Ingredients
- 1 tbsp Butter
- 1 cup icing sugar
- very small splash of milk

Add salt, flour, sugar, yeast, warm water and oil to TMX bowl in that order. Mix on speed 4 for 5 seconds. Knead for 2 minutes.
Add sultanas and mix on speed 4, reverse, for 5 seconds.
Place dough in to thermoserver/bowl which has been lightly oiled with coconut oil. Put lid on or cling wrap and leave in a dry place to rise. You want it to double in size, which was about 30 minutes on a warm day.
Once the mixture has doubled in size, remove it from your thermoserver. Knock it back to its original size.
Line a baking tray with baking paper. Divide the mixture in half, then quaters, then eighths to get equal portions.
Form the dough into individual logs and place them on the baking tray with about 3cm gap.
Leave for a further 30 minutes in a warm spot to rise again.
Preheat oven to 200 degrees. Once buns have finished rising, bake for 15 minutes or until golden brown.
Remove from oven and cool.
While the buns are cooling, add your sugar for the glaze to TMX bowl. Mill on speed 9 for 10 seconds. Scrape bowl down. Add water and melt sugar on speed 3, varoma, 3 minutes.
Brush the buns with the glaze and let them cool completely.

Add your butter to your TMX bowl and turn thermomix on to speed 4.
Slowly add in your icing sugar, a tablespoon at a time. When all the icng sugar is in the bowl, you may need a small splash (a tbsp at the most) of milk to bind it. Ice your buns and eat away Top with coconut or sprinkles.

Yes, it would be the same yeast....Lowans is an easily found one in the Supermarket and quite economical for most of us to use. The recipe requires more yeast to make them super fluffy, so whenever you see an Aussie recipe do whatever is says...some overseas yeast recipes use a different form of dried yeast ( in which case Google is your friend!). Hope this helps.

Thanks for the recipe and to all those that have commented and rated it - I tend to look at ones that have been tried and enjoyed by others!! Was really easy to make and everyone in my family enjoyed. The only thing I would consider next time is halving the glaze amount. I glazed mine 3 times and still tipped out about half of it in leftovers. Thanks again

I have a question... my Thermomix consultant told me about Lowans Instant Dried Yeast. Is this the same as the dry yeast in the recipe? I have been advised by my consultant, and it also says on the packet, to use 2 level teaspoons per 500g flour. The recipe calls for half that quantity of flour but specifies 3 teaspoons of dry yeast. I am a bit confused and would be grateful if anyone can explain ....
