PASTA SAUCE
- 4 cloves garlic
- 1 onion, quartered
- 130 grams olive oil
- 250 grams pumpkin, roughly cubed
- 100 grams carrot, roughly chopped
- half red capsicum, deseeded & chopped
- 1 large handful baby spinach
- 600 grams ripe tomatoes, quartered
- 12 leaves fresh basil
- 1 sprig lemon thyme
- 1 sprig rosemary
- 1 heaped teaspoon Himalayan salt
- 1 teaspoon Coconut sugar

Put Garlic in "Closed lid" , blitz, scrape down bowl
Add Onion, 3 sec speed 6
Add 50 grams of Olive oil, saute 100 degrees 3 min speed 1
**SPEED UP SLOWLY IN THIS NEXT STEP "Closed lid" STILL WARM**
Add Pumpkin & Carrot, 5 sec speed 6
Add remainder of ingredients (including the remaining 80g of Olive Oil).
Blitz 15-20 seconds speed 9-10.
Cook 20 minutes VAROMA speed 2-3
Allow to sit for 5 minutes
**CAREFULLY INCREASE SPEED** to speed 4 and mix for 1 minute
Pour into Sterilised Jars
Tip
I was able to fill 2 x 700g glass jars.
Use whatever vegetables & herbs you have on hand.
Be aware of stronger tasting vegetables that your kids may not like or adding vegetables that may alter the typical "reddish" colour of typical store bought pasta sauce.
Introduce new vegetable tastes in smaller quantities and gradually increase so kids don't notice.
I store it in the fridge. We use it a lot so not sure how long it can be stored for.
Would be very easy to freeze and use as needed.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

This was delicious! I only had one fresh tomato so used a can of tinned tomato. I also added cauliflower, celery and sweet potato as I had some That needed using. It made a huge amount. I will make it into a pasta bake for the kids tonight. Thanks for the recipe!
