Ingredients

Dadar (Coconut pandan pancake)

  • 100 grams rice
  • 35 grams raw sugar
  • 100 grams coconut milk
  • 1/4 teaspoon salt
  • few drops Pandan essence
  • 3 eggs
  • 200 grams palm sugar
  • 150 grams Freshly grated or desicated coconut
  • 1 fresh pandan leaf
  • 100 g water

Recipe's preparation

    Dadar (Coconut pandan pancake)
  1.  Mill rice and sugar 20 sec/speed 9.

  2. Add eggs, coconut milk, salt and pandan essence in TM Bowl. Mix 30 sec/speed 9. Batter should be a very liquid consistency. 

  3. Heat a non-stick pan over low heat.  For each pancake, pour 4 tablespoons of the batter into pan and cook for 2 minutes, or until top is just set. Turn the pancake over and cook for a further minute.  Repeat until all batter has been used and let pancakes cool to room temperature.

  4. Sugar Syrup
  5. Place palm sugar in bowl and chop 3 secs/speed 5. Add water and pandan leaf cook 5 min/100C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" . Leave to cool for 5 mins.


  6. Filling
  7. Place sugar syrup and grate coconut in bowl, mix 5 secs/speed 3/Counter-clockwise operation"Counter-clockwise operation"

    Place 2-3 Tablespoons on pancake and fold like a springroll.

Tip

 

Pandan can be easily found frozen in Asian grocers. Often known as ‘Asian Vanilla’ it has long, bright green leaves and a sweet, unique flavour.

    I made this, and the balter didn't seem to work well for me. It kept breaking up in my pan. Maybe the mixture is too thin, or the pan not hot enough, but it didn't work.Puzzled

    I cooked these as a trial run for a Balinese themed birthday party, tasted great.  Easy too.  Only thing is my batter wasn't green Like in the picture?  Should i have put the leaf in the batter mixture instead of the pandan essence?

    Hard to say what the flavour is .... i love it and yes it adds the green colour.  The bowl in the middle has the cocunut filling in it just for the photo.  They are devine to eat like a crepe.

    I have never used pandan essence or leaf before. What sort of flavor does it add. I take it that it causes the batter to turn green? What have you served in the middle of the plate. Looks like an interesting dish.
