Pancakes
- 50 g almonds
- 2 eggs
- 1 teaspoon xylitol, or a pinch of stevia
- 1 teaspoon baking powder
- 120 g cream cheese, or mascarpone

1 Mill almonds 20 seconds / speed 10 / mc on
2 Add remaining ingredients and mix 30 seconds / speed 4 / mc on
3 Allow mixture to rest 20 minutes to thicken
4 In a medium hot pan, add 20g of unsalted butter
5 Pour in pancake mixture to the size you desire and after approx. 1 minute flip and cook a further 30 seconds.
6 Add more butter and repeat until mixture is finished.

Have tried several different recipes for low carb pancakes and not liked any, this is the only one I've made that taste like the wheat version.

These look amazing in the picture but I could not stomach them. Far too cheesey tasting for something I like to think of as a sweet meal. I found them quite sickening unfortunately.

It was a good thing that our neighbours were not home when I gave these to my husband for dessert tonight. The were many exclamations of how delicious and awesome and light they were, along with lots of joyous groaning! And "Oh btw did I tell you these were delicious" and "You can make these any time you like!" (Recipe cooked without xylitol and no other sweetener added) Mixed berries on top only. Thumbs up all round!
