Ingredients

Base

  • 170 g Arnott’s butterscotch snap biscuits
  • 80 g Butter
  • 20 g raw almonds

Lemon Filling

  • 400 g condensed milk, (2 cans)
  • 500 g Philadelphia cream cheese
  • 300 g thickened cream
  • 300 g lemon juice
  • Zest from one lemon

Recipe's preparation

  1. Line a 22cm springform pan with baking paper. Bottom and sides

  2. BASE
  3. Add almonds to the bowl and mill 4 secs/speed 9

  4. Add broken biscuits to bowl and mill 7 secs/speed 9. Transfer to a bowl

  5. Add butter to TM and melt 50 secs/70°C/speed 2. Return biscuits and almonds back to bowl and mix 20 secs/Counter-clockwise operation"Counter-clockwise operation" /speed 5 or until combined. Press into prepared pan. Chill

  6. FILLING
  7. Add condensed milk, cream cheese, cream to clean TM bowl. Mix for 40 secs/speed 6 adding the lemon juice in the last 10 secs. Add most of the zest to the bowl and combine 10 secs/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

  8. Pour mixture over prepared base then sprinkle remaining lemon rind over top. Refrigerate for a minimum of 8 hours or preferably overnight

Tip

Add more or less lemon juice and rind depending on personal taste

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
