Ingredients

Thai Satay Chicken

  • 800 grams diced chicken thighs
  • 2 cups frozen Thai vegetables

Chicken Marinade

  • 80 ml coconut cream, (from a 400ml can)
  • 1.5 heaped tablespoons crunchy peanut butter
  • 1.25 heaped tablespoons packed brown sugar
  • 1.25 tablespoons Thai red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • pinch of salt
  • 2 teaspoons peanut oil

Peanut Sauce

  • 320 ml coconut cream, (rest of 400ml can)
  • 1/4 cup crunchy peanut butter
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 20 ml packed brown sugar
  • 1 teaspoon Thai red curry paste
  • 1 clove garlic
  • pinch of salt

For Serving

  • torn coriander leaves and sliced red chillies

Recipe's preparation

    Marinade
  1. Combine all marinade ingredients in a large seperate bowl. Add diced chicken, cover and marinate in fridge for at least an hour

  2. After marinating, place chicken and vegetables into Thermomix bowl. Add lid and measuring cup. Cook for 25 mins / 100C / Counter-clockwise operation"Counter-clockwise operation" / speed 1

  3. Remove chicken and vegetables from bowl and place in Thermoserver while preparing peanut sauce

  4. Peanut Sauce
  5. Add rest of coconut cream to Thermomix bowl, along with the rest of peanut sauce ingredients

  6. Add lid and measuring cup to Thermomix bowl. Cook for 2 mins / 100C / speed 2. Scrape down bowl then cook for another 2 mins / 100C / speed 2

  7. Pour suace over chicken in Thermoserver and combine. Serve over rice or noodles and top with coriander leaves and chillies
