- 1 cup of sour cream
- 2 eggs
- 3/4 Cup of Caster sugar
- 1/4 cup of vegetable oil
- 1 teaspoon vanilla extract
- 3 level tablespoons of limoncello
- Zest of one lime
- 2 cups of plain flour
- 2 level teaspoons of baking powder
- 1/2 level teaspoon of baking soda/ bicarbonate of soda
- 1/2 level teaspoon of salt, this is needed to meld the flavours
- Glaze
- 1 1/2 Cups of icing sugar
- 3 level tablespoon of limoncello

Add sour cream, eggs, sugar, vegetable oil, vanilla, limoncello, and zest to the bowl - mix 1.30 minutes speed 5
Add flour, baking powder, and bicarb/baking soda mix 30 seconds speed 4 - do not over mix, scrape bowl and stir gently
Pour into an oiled Brunt tin/pan and cook 160 deg for aound 35-40 or untill skewer comes out clean - if fan forced set the fan on low
Rest the cake on a rack for 10 minutes before turning out of the pan and let it cool
Glaze
Mix the limoncello and icing sugar and drizzle over cake when cool
Serve and enjoy
