Ingredients
Pudding
- 200 grams dates, Pitted, chopped in half
- 250 grams Boiling water
- 1 level teaspoon Bi Carbonate Soda
- 60 grams soft butter
- 70 grams Soft brown sugar
- 20 grams Vanilla extract/essence
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon ginger
- 1 egg
- 120 grams SR flour
Caramel Sauce
- 240 grams Boiling water
- 60 grams Butter
- 80 grams brown sugar

1. Pre-heat oven to 180 degrees C
2. Place dates in a bowl with boiling water and bi-carb soda and leave to soak for 10 minutes.
3. Whilst soaking your dates, place butter, sugar and vanilla in TM bowl with the butterfuly attachment. Mix on speed 4 for 30 seconds until light and fluffy, scraping down sides and then mixing on speed 4 for another 30 seconds.
4. Add egg and beat on speed 4 for 10 seconds until well combined.
5. Remove butterfly attachment and scrape down sides.
6. Add in dates/water/bit-carb combo and beat on speed 4 for 10 seconds.
7. Spread into prepared tin/dish.
1. For sauce, place all ingredients into TM bowl and cook on 80 degrees for 5 minutes at speed 4.
1. Gently pour the Sauce mixture over the pudding mixture.
2. Bake at 180 degrees for 35 minutes or until skewer comes out relatively clean.

Tip
1. You can prepare the pudding ahead and then add the sauce just before you place in the oven.
2. Delicious served with vanilla ice-cream, cream or both!

This recipe was a winner in our house. I read the comments before starting and seen that the flour step was missing.
I added the flour in during the last step and mixed for about 5-10 seconds more. I also found that the mixture was very runny, so I added approx 50g extra of SR flour as well.
Worked perfectly and we enjoyed it + our dinner guests!
Shame that a line was missing from the recipe instructions because this is a glorious pudding. A five star hit with my guests tonight and I'm sure it will become one of my favourites. Don't forget to add the flour and spices and you'll have a winner every time.
Terrible!!! When do you add the SR flour?? When do you add the cinnamon?? When do you add nutmeg And ginger? I was unlucky enough to read the instructions and cooked it without SR flour. Disaster!
