Ingredients

  • 250 grams quiona
  • 370 grams vegetable stock
  • 1 bunch mint leaves
  • 30 grams Finely grated Parmesan
  • 30 grams extra virgin oilive oil
  • 250 grams fresh or frozen peas
  • 2 cloves garlic
  • finely grated zest of 1 lemon
  • juice of half a lemon
  • 4x180 grams skinless salmon fillets
  • 1 zucchini, finely chopped

Recipe's preparation

  1. Mill parmesan & garlic speed 9/ 4 secs.  Add mint & 30ml oil.  Mill till a course paste 3secs/ speed 5.  Add peas, lemon zest & juice.  Turbo 1 sec.  Remove from TM, do not wash bowl.

    2. Add 370ml water, 1.5tablespoon TM veg stock paste & 1 cup quinoa.  Place fish in varoma.  Counter-clockwise operation"Counter-clockwise operation" /varoma/15mins/speed 1.

    3.  Combine quinoa with pesto & stir in zucchini.  Serve with salmon & reserved mint leaves.

Tip

If using frozen peas, put the peas in a bowl, cover with boiling water for 1 minute and then strain.  Add peas when appropriate.

    I made this by putting the quinoa straight into the jug. Even after 23 minutes, it still hadn't cooked properly, but have never had that problem when using the basket. In future would probably use the basket. However the dish turned out quite nicely - the quinoa mix was quite sweet.

    Yes you can.  I placed the quinoa directly in the thermomix when I cooked this recipe.  I have heard that you can steam quinoa, but you need to soak it from the night before with a spoonful of yoghurt tmrc_emoticons.)

    If using tinned salmon (as I did), it might be an idea to serve with a salad, to ensure a range of textures.  Tasty dish!

    Hi, I'm fairly new to using a thermomix and wondered if the quinoa needs to be placed in the basket or directly into TM bowl? Can you still steam if there is something other than just water in the TM bowl? Thanks, Carrie.

    Seriously yum, and so easy! Didn't have any zucchinis at home, but can't wait to try it again with zucchini!
