Ingredients
Asian Chicken Noodle Salad
- marinade/dressing
- 1/2 --- cup of soy sauce
- 2 level teaspoons of sesame oil
- 2 level teaspoon of olive oil
- 2 level tablespoons of rice wine
- 2 heaped tablespoons of brown sugar
- 1 lime juiced
- 2 cloves garlic, peeled
- 2 cm piece of fresh ginger, roughly sliced
- Salad
- 600 grams of chicken breast or thighs, diced into bite size pieces
- 450 gram packet of Singapore noodles
- 2 cups of bean sprouts
- 2 carrots, grated
- 2 cups of snow peas, sliced
- 1 handful of coriander leaves, sliced
- 1 small cos lettuce, sliced

- Place the garlic and ginger in to the bowl and chop 6 seconds, speed 5 -- scrape down bowl
Add rest of marinade/dressing ingredients and blend 5 seconds, speed 4
Transfer to a jug - no need to wash the bowl
Place diced chicken into a bowl and pour over 1/4 cup of the marinade/dressing and stir through - place in the fridge for 2-3 hours to marinade and stir a few times
After the marinade time fill your jug with one litre of water, place diced chicken in the varoma trays and cook 14 minutes, varoma, speed 4 and set aside to cool slightly
Place noodles in the thermoserver and pour over boiling water, put on the lid and let them sit for 5 minutes then drain well and when cool enough separate with your fingers
In a large salad bowl add the rest of the salad ingredients and gently toss to combine
Add the chicken and pour over the rest of the marinade/dressing and gently toss to combine - Serve and enjoy
Tip
If you taste the marinade/dressing it will have a bite and strong taste, but when mixed through the salad the flavour is delicious blended through the ingredients

Too much effort. I don’t like cooking. Although this salad was nice, it was a huge effort for me. I was exhausted by the time I got to eat. I didn’t have 3 hours for the marinade to work properly. It makes a huge salad, too much for just me. To make life easier, chicken and marinade should be prepared the night before. I would probably make this if I had to take a salad somewhere, however I would certainly do it in two stages as it is a lot of work.
OMG!!!! This Salad is addictive!! AMAZING!! Love it!! It is a regular on our menu and even my children love it!

rednjoey: You don't use the marinade that had the chicken in. That was only 1/4 cup, you what was set aside.
Just a thought, if the marinade has had raw chicken in it, shouldn't it be heated through before using on a salad?
