Ingredients
chicken & parmesan mixture
- 20 grams fresh chives, (or any other fresh herbs you like)
- 2 cloves garlic
- 1 onion, cut in half
- 1 zuchinni, roughly chopped (I peel mine for fussy kids, but peeling is not necessary)
- Salt and pepper, to taste
- 1 teaspoon stock powder of your choice, (either chicken or vegetable stock powder, either one is fine)
- 100 grams Grated Parmesan Cheese
- 250 grams breadcrumbs
- 500 grams Lean chicken mince
- Plain flour for rolling

Place chives in Thermomix bowl and chop 5 seconds, speed 7. Scrape down sides of bowl and repeat if necessary.
Add garlic, onion and zuchinni to bowl and chop 5 seconds, speed 7. Scrape down sides of bowl.
Add salt, pepper, stock powder, parmesan and breadcrumbs to bowl. Mix 5 seconds, speed 6.
Add chicken mince to bowl and mix 30 seconds, speed 3 or until well combined.
Form into patties and roll in flour lightly. Place in fridge for 30 mintues.
Cook the patties in a fry pan or barbeque until well browned and cooked through.
Enjoy in a burger, or on their own with a side of mash and steamed veg.
Tip
**Extra veggies can be added or substituted for the zuchinni.
**If your mixture is dry, an egg may be required for example if you change the veg (say a carrot instead of a zuchinni), however I find with 1 zuchinni that the mixture is wet enough and so no egg is needed.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This was delicious and quick to make I subbed the garlic & onion for powder (as was out)used shallot zucchini and minced 2 chicken breast! Served on iceberg lettuce or brioche bun for hubby with homemade Mayo and dash of chilli sauce 😋
Yummy! I added carrot, used onion powder instead of onion, reduced the breadcrumbs and added an egg.
I made these last night! Huge hit with the husband and toddler! I used x2 chicken breasts (approx. 500g cut into pieces 3cm) and minced 40sec/speed 9 1 egg and only x4 tablespoons of breadcrumbs. No herbs.
These were a hit with my 2yo but they're a bit bread-y with so many breadcrumbs. If use half breadcrumbs plus an egg next time.
Made these for dinner. Added sweet potato, carrot & broccoli in lieu of zucchini. Used 150 grams of panko breadcrumbs in lieu of plain breadcrumbs. Added an egg and a good splash of sweet chilli sauce. Mixed well when added egg on reverse. Really yummy.
Thanks so much for sharing this recipe. I didn't have zucchini, so replaced this with carrot - absolutely delicious. I ended up having to mix by hand in the end - my thermomix did not like mixing it. Will definately be making again. Very easy and tasty.

Great recipe. Easy to make and enjoyed by the family.
I used a carrot instead of zucchini, reduced breadcrumbs to 210 g and added an egg.
will make again and experiment with adding different veggies.

I didnt have any Zucchini so just added Carrot, I had a KG of Chicken mince so doubled all the ingredients that i had.
I only had 150g of cheese and 250g of bread crumbs, I think if I doubled the bread crumbs I would have been in trouble, as the others have said Thermi didnt like mixing even with only 500g of mince so hubby hand mixed them, they were loved by all, will be on high rotation in our house.
