Ingredients
Creamy Chicken and Mushroom Risotto
- 50 g olive oil
- 300 g chicken thighs, skin off, chopped
- 1 onion
- 1 clove garlic
- 150 g Swiss Brown Mushrooms, sliced
- 400 g arborio rice
- 100 g white wine
- 800 g hot water
- 80 g Baby Spinach Leaves
- 100 g cream
- 2 tablespoons TM stock concentrate
- 100 g Parmesan cheese, Grated in the TMX

Grate Parmesan in the TMX for 10 seconds on speed 9. Set aside.
Chop garlic and onion for 2-3 seconds on speed 6-7.
Add oil and saute for 2 minutes, 100C, speed 1 with MC off.
Add rice and wine and saute for 2 minutes, 100C, reverse and speed 1.
Add stock, chicken, mushrooms and water and cook for 16-17 minutes on 100C, reverse and speed 1.
Stir through cream,spinach leave, cheese and seasonings.
Cover and stand for 5 minutes.

Tip
Use Semi Dried tomatoes as well or in place of another ingredient

I made this tonight and it was divine, I used a cooked BBQ chicken instead though. It will be a regular in my house now. Thank you for a great recipe.
I used seaford mix with it and worked great. All steps as normal but add half kilo of seaford mix at the 12 minute mark instead of the chicken and mushroom for the cook section.
This was a great risotto! My italian mother scoffs at thermomix risottos but honestly this was so good even she wouldn't be able to argue.
Will definitely use this recipe again.
I put heaps more chicken than the recipe called for, no spinach and instead of cream used butter (as i would do when making on the stove).

First time cooking in my tm31 that's been gifted to me by a friend and I made this recipe! Delicious and easy for my first time cooking with the thermomix. Confident to be a bit more more adventurous next time, maybe!

This is delicious!! I replace the cream with coconut cream, and omit the cheese for a dairy-free risotto so our dairy intolerant son can have it too. A family fave.
