Ingredients
Pastry
- 150 g wholemeal flour
- 75 g unsalted butter
- 50 g chilled water
- 1/2 tsp salt
Filling
- 200 g shortcut bacon rasher, cut into 3 pieces
- 4 eggs
- 50 g Oat Milk, or almond etc
- 100 g Plain Greek Yoghurt, Lactose free
- 1/2 tsp salt
- To taste black pepper, freshly ground
- 100 g pumpkin, 1cm x 1cm cube
- Handful Fresh Baby Spinach
- 8 cherry tomatoes, Halved
- 50 g Tasty cheese, Lactose free

- Place cheese in mixing bowl, grate 5 sec/speed 7.
Transfer to a bowl and set aside.
Preheat oven to 180°C. Grease and flour a quiche tin (Ø 26 cm).
Place flour, butter, salt and water in mixing bowl, mix 15 sec/speed 4.
Scrape sides and repeat 5 seconds/speed 4.
Transfer out and shape into a ball on thermomat.
Using a rolling pin, roll out pastry on thermomat or lightly-floured surface. Line prepared quiche tin with pastry, prick base with a fork then set aside.
Place bacon in mixing bowl and chop 1 second/speed 5, check and repeat if needed.
Sauté 3 min/120°C/speed slow.
Drain bacon through simmering basket and discard fat.
Set bacon aside.
Place eggs, oat milk, yoghurt, salt and pepper in mixing bowl, mix 30 sec/speed 4.
Distribute reserved sautéed bacon cubes and veggies over pastry base and cover with egg mixture.
Sprinkle with reserved grated cheese and bake for 25 minutes (180°C) or until golden. Serve warm or cold

This is a perfect lunch/dinner for the health concious. There are 426 calories and 20g of protein per serve.
Change the vegetables to suit you and what's in the fridge/needs using.
If not Lactose free, use normal cheese and yoghurt.
