Ingredients
Zucchini balls
- 2 zucchini, cut into pieces
- 100 g Parmesan cheese, cut into 3 cm pieces
- 100 g Mozzarella Cheese, cut into 3 cm pieces
- 100 g feta cheese, broken into pieces
- 1 onion, cut in half
- 1 garlic clove, large
- dill, fresh
- parsley
- salt
- pepper, ground
- 60 g panko breadcrumbs
- 125 g canned sweet corn kernels, drained
- 2 eggs
- panko breadcrumbs, extra for rolling

- Place zucchini in bowl, grate 6sec/sp5.
Place zucchini in simmering basket over a bowl, Use spatula to drain excess liquid from zucchini. Sprinkle with salt and leave to strain for 20 minutes.
Place parmesan cheese in bowl, Grate 7sec/sp7.
Place in a bowl to the side.
PLace mozzerella in bowl and chop, 6sec/sp5.
Pleace in a bowl with parmesan cheese to the side.
Place onion, garlic, dill and parsley in bowl and chop. 5sec/sp5.
With your hand, squeeze excess moisture out of the zucchini over the simmering basket.
Once you're happy with the consistency, add zucchini, grated cheeses, feta, panko crumb, eggs, corn and pepper mix 10sec/reverse/sp4.
Scrape sides of bowl and repeat 5 secs/reverse/sp4.
Shape into balls, your choice of size and roll through extra panko crumb.
Place in fridge for 1 hour.
Spray with oil and cook in air fryer, shallow fry or deep fry.
I cooked in the air fryer, 190 deg for 15 minutes.
Serve with dipping suace of choice - Garlic aioli, romesco etc.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
