Ingredients

Crumbing mix

  • 50 g Parmesan cheese
  • 200 g stale bread or breadcrumbs
  • 10 g Cashews
  • to taste salt & pepper
  • to taste Dried herbs (optional)
  • to taste dried garlic

Chicken mix

  • 4 fillets chicken breast, Roughly diced
  • 2 carrots, Roughly chopped
  • 2 Zuchini, Roughly chopped
  • 1 bunches Brocolli
  • 1 onion, Halved
  • 2 teaspoons Baking Soda
  • to taste salt & pepper

Cooking

  • olive oil
  • Paper towel

Recipe's preparation

    Make the crumb mix
  1. Add all the crumbing ingredients and blitz 10 sec. Speed 6. Set aside. Dont clean the bowl.

  2. Making the chicken mix
  3. Add parmesan cheese and blitz 10 sec - sp 9. set aside in the large bowl. 

  4.  Add all other ingredients excpet chicken finely chop 15 sec - sp 6. then scape sides and repeat until you get small pieces

    *The veges i used were carrots , zuchini, onion and brocolli (chosen as they are poison in my household) i usually judge how many times i need to blitz by the veg and on how sneaky i have to be with the kids. I repeated this step 3or 4 times)

  5. Transfer to large bowl

  6. Add 1 - 2 chicken breasts and mince  15 sec - sp 6. transfer to large bowl and repeat until all chicken had been minced. 

  7. Mix to combine the veg and chicken into a nice even mix.  

  8. Assembly and cooking
  9. Take small balls of the chicken mix and coat in crumb mix then flatten slightly. 

  10. Heat small amount of oil in a large pan over low to medium heat 

  11. Place the nuggets in the pan only to slightly brown them either side and seal them. 

Tip

These are bulk recipe amounts, if making small batches adjust quantities.

If freezing allow to cool completely first ( I've made that mistake before)

For cooking they take about 15 - 20mins in the oven depending on the thickness of your nuggets.  I always check then by slicing one first.

    My kids LOVE this recipe..... all three (aged 11, 9 & 7) of them separately came to me to proclaim how good these were and how much better than Macca’s they were. So big winner in our house. 😍

    Can you freeze the raw mixture to use another day if you didnt want to cook it all today?
