Ingredients

Satay Meat Casserole

  • 500 grams beef, lamb or pork, 2cm cubed
  • 1 brown onion, halved
  • 2 cloves garlic
  • 20 grams olive oil
  • 1 carrot, sliced
  • 150 grams cabbage, sliced
  • 200 grams pumpkin, 2 cm cubed
  • 2 tsp Ground Coriander
  • 1 tsp ground cumin
  • 1/2 - 1 tsp chilli powder, to personal taste
  • 5 cm fresh lemon grass
  • 100 grams Peanut Butter
  • 140 grams coconut milk
  • 2 tbsp soy sauce or tamari
  • chopped parsley or coriander to garnish, (optional)

Recipe's preparation

    Satay Meat Casserole
  1. Chop lemon grass in bbowl for 5 seconds on Speed 7. Scrape bowl and repeat if neccessary. Set aside
  2. Add onion and garlic to bowl and chop for 5 seconds on Speed 7
  3. Add oil and saute on Varoma temperature for 2 minutes, Speed 1.
  4. Add coriander, cumin, chilli powder, lemon grass and peanut butter and mix for 10 seconds on Speed 5.
  5. Add coconut milk and soy sauce, mix for 5 seconds on Speed 3
  6. Add meat, carrots and pumpkin to bowl and cook for 20 mins on 100 degrees, Reverse, Soft Speed
  7. Add cabbage, stir it into the mixture and cook for a further 10 mins on 100 degrees, Reverse, Soft Speed
  8. Serve immediately, or set aside in ThermoServer while you cook some rice. Garnish with chopped parsley or coriander.

Tip

When cooked, set aside in ThermoServer while you cook some rice (serving suggestion)


My kids like this with 1/2 teaspoon of hot chilli powder. If not feeding kids, or you like a bit more 'heat' you could use a whole teaspoon.

If you don't have any peanut butter, simply mill peanuts and lemongrass for 10-20 seconds on Speed 9 until the desired consistency is achieved.

    Was very pleasantly surprised by how delicious this was! I had lamb to use but had never eaten it in a satay before, and along with pumpkin and cabbage I was a bit dubious!! However it turned out awesome! The hubby and two fussy kids loved it too... have saved to my collections and will definitely be making again, and again, and again....

    Made this with some leftover roast pork for the family, it is delicious and very versatile. As the pork was already cooked I just added it towards the end of the cooking time.

    Went to make this tonight then realised I only had half the ingredients...but....I used cream and half a cup of desiccated coconut (instead of coconut milk) and had no pumpkin or carrot or chilli so just left them out and it was soooo tasty, kids all had seconds. I will make it the same way again but add green beans next time. Yummo.

    This is absolutely delicious and so easy. I had beef schnitzel (not crumbed) so didn't need to cook meat for long so added in with all the vegetables and just cooked the lot for 20 minutes. Served with brown rice.

    It was nice but.... just not enough flavour for us. My husband said it was too much like a stew rather than a curry or a satay.
