Ingredients

Lamb, Red Wine and Rosemary

  • 2 tablespoons olive oil
  • 500 g lamb leg, Fat trimmed, cut into 3cm cubes
  • 2 leeks, Sliced thinly
  • 2 celery stalks, Chopped finely
  • 2 carrots, Chopped coursley
  • 2 garlic cloves, Crushed
  • 2 tablespoon tomato paste
  • 1/4 litre Dry Red Wine, (250ml or 1 cup)
  • 1/4 litre salt reduced beef stock, (250ml or 1 cup)
  • 1 tablespoon fresh rosemary, Chopped
  • 1/3 litre water, (375ml or 1 1/2 cups)
  • 1 can lentils, Drained and rinsed
  • 150 g frozen peas, Thawed
  • 1 bunch flat-leaf parsley

Recipe's preparation

  1. Add half the olive oil and 250g of lamb into the bowl and use high heat mode (look for browned beef cubes on cookidoo) to brown the first bath of meat. Repeat with the second batch. If you are using more meat you may need to do more batches. Set aside.

  2. Heat the remaining oil in the bown and cook celery, leek, carrot and garlic using high heat mode again (look for sauteed capsicum) to soften those vegetables for 8 minutes or so.

  3. Add paste and red wine then cook 8 minutes/varoma/reverse speed 2. Return lamb to bowl, with stock, rosemary and water.

  4. Cover and slow cook Slow Cooking"Slow Cooking" for 3 hours, adding lentils into the hole in the lid with one hour to go. check to ensure meat and lentils are tender.

  5. Serve with additional rosemary and parsley if desired. Serve with peas and vegetable mash of choice
