Ingredients
- 1 onion, halved
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 Fresh or Dried Chorizo Sausages sliced
- 1 zucchini, sliced (thin rounds)
- 700 g chicken thighs, skin off, (I use thighs and cut each thigh in 4 pieces so they dont cook down to much)
- 1/2 cup chicken stock, or equivalent 1 Tbsp TM vegie stock and water
- 400 grams chickpeas, rinsed and drained
- 1 heaped teaspoon smoked paprika
- 750 grams tomato based tomato sauce, (use a nice rich one or add 1 tablespoon of tomato paste)
MINTED COUSCOUS
- --- couscous, (1 and 1/2 cups)
- --- chicken stock, (1 and 1/2 cups)
- 1 bunch mint leaves, fresh, chopped (half a cup)

I'm cooking this todayRecipe's preparation
Place Couscous in a bowl and cover with stock.
Leave until the stock is all absorbed.
Wet some baking paper and place on varoma tray. Spread couscous on tray, sprinkle with chopped mint and place in Varoma.
Add onion and Garlic. Chop for 2 Seconds on speed 7
Add sausage and cook on varoma temp for 3 mins speed soft reverse
add zucchini and cook on Varoma temp for 1 mins on speed soft on reverse
Insert Butterfly and chicken to bowl
Cook on varoma temp for 3 mins speed soft and reverse.
Add paprika, pasta sauce, chick peas and stock.
Place Varoma with Couscous on top of TM. Cook on Varoma temp for 15 mins (or until chicken and couscous are fully cooked) speed soft on reverse.
Remove Couscous and place in Thermoserver. Add chopped mint and a little butter and stir gently
Place Stew in another Thermoserver (if you are lucky enough to have 2) or similar dish.
Serve Chicken stew over Cous Cous and add sour cream to serve
sprinkle with extra mint on top.

This dish is great and so tasty
I was really looking forward to this and unfortunately was a little dissappointed. It tasted ok, a little on the bland side but I think I can tweak it to give it more flavour.
I have updated this recipe to make it a bit more user friendly.
I have added an onion and 2 cloves of garlic (recipe wont update the new ingredients for some reason )
Also have worked out Couscous is great when done in the varoma at the same time
Chickpeas would be really nice too Purple Turtle
The flavours of the stew was surprisingly quite good given that no onion or garlic were included (a usual inclusion for most of the things I cook). Am still getting familiar with the TM, so perhaps I did something wrong, but I found that the chicken stuck on the butterfly. Am going to try adding chickpeas in next time.

think it might be better just to heat the stock in the TM BOWL and then add the couscous. just mix for 10 seconds on reverse to combine then let it sit with the lid on until it absorbs it all. sorry for the problem. the first time i did it it was fine then the last time i did it i had the same problem.

I had no luck with this at all. My cous cous was big lumps at the end, and I used the butterfly. What am I doing wrong?
Great dish - loved it - except I forgot to use the butterfly for the cous cous so it didn't mix properly and got very stuck together... my fault!! Flavours were great though!
This is a recipe i have been making for my family for ages and only just converted to the Thermomix. i think it is just as good and a lot quicker in the Thermomix. Everyone loves it at home
if you want to make it even quicker chop your chorizo and zucchini on speed 5 for about 3 secs.
i prefer mine sliced thinly so you can taste all the flavours separately
