Ingredients

  • 160 grams stale bread, torn into pieces
  • 3 shallots
  • 3 cloves garlic
  • 1 green apple, peeled, cored and roughly chopped
  • 3 dried figs, hard stem removed
  • 3 dried apricots
  • 10 sage leaves
  • 8 sprigs fresh thyme
  • 50 grams shelled pistachios
  • 250 small piece diced pork, partially frozen
  • 4 slices prosciutto
  • 1 egg
  • 75 grams brandy
  • 30 grams olive oil
  • Salt and pepper, to taste

Recipe's preparation

  1. Place stale bread in clean dry bowl and blitz for 10 secs/speed 8. Set aside in another bowl, but don't bother washing thermomix bowl.

    Add shallots and garlic and chop for 5 secs/speed 5. Scrape down sides and add apple, dried fruit, herbs and nuts. Chop for 5 secs/speed 6. Add to reserved breadcrumbs, and don't bother washing bowl.

    Add pork and prosciutto to bowl and turbo 3 times for 1 second.

    Add reserved ingredients and eggs, brandy, olive oil and salt and pepper to season and mix for 20 secs/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

    If necessary, you can finish combining mix with your spatula. This will stop getting mix too minced by blades before it is all combined.

    Spoon stuffing into the cavities of your turkey, finish with a scrunched up piece of baking paper or foil to stop the stuffing falling out. Roast as per instructions for the size of the bird.

Tip

There isn't picture because it it isn't pretty...is delicious though

If you have left over stuffing you can freeze it for another roast later on, or roll it into balls and roast with vegetables - they’ll take about 25 minutes to cook.
