Ingredients
Tuscan Breadcrumbed Lamb Cutlets
- 2 cloves garlic
- 1 stalk rosemary
- 10 g rock salt, - can be reduced to your liking
- 16 lamb cutlets, trimmed
- 2 eggs, beaten
- plain flour
- stale bread / bread rolls, 1/2 a loaf of bread, or 4-6 bread rolls

Method
Add Garlic & rosemary to the TM bowl, 10 seconds on speed 8
Add salt and mix for 10 seconds on speed 8
Add bread and blitz on Turbo until the bread crumbs are the size you like, one turbo for 4 seconds will give you chunky bread crumbs, repeating turbo will give you a finer consistency.
To crumb the cutlets, dip in flour, then egg then breadcrumbs.
Pan fry until golden brown.
Serve with your choice of salad or vegetables.
