Ingredients

chicken filling

  • 200g chicken tenderloins
  • 1 Bunch Mint Leaves
  • 10 rice wrappers
  • 1 Lebanese cucumber, sliced thick matchsticks
  • 2 Kaffir lime leaf
  • 1 lemongrass, white part only, bruised
  • 1 red chilli

nuoc cham dipping sauce

  • 1 garlic clove
  • 1 chilli, red
  • 2 limes juiced
  • 2tbs palm sugar
  • 2 1/2tbs fish sauce
  • 1mc water

Recipe's preparation

    chicken
  1. put chicken tenderloins on damp baking paper on top tray of veroma season with salt and pepper ,add 1 litre water to jug,

    cook 20mins/veroma/speed 2 check to make sure cooked through add extra time if needed

     

  2. drop kaffir lime leaf/garlic/chilli/mint/lemon grass onto running blades speed8 add chicken and chop rev/speed 5 for 2=3 seconds

     

  3. for wrapping you need bowl hot water you just quickly dip rice paper put on clean teatowel then add chicken filling extra cucumber/mint leaves and chicken and wrap secret is not to wet to much tmrc_emoticons.) look for tips on google or youtube

  4. dipping sauce chop garlic and chilli speed 9/3secs scrape down add everything else and mix 20 seconds till sugars melted

     

    you can turbo some roasted peanuts to go on top sauce

    This has become a family summer favorite for us. I throw in whatever asian herbs I have on hand and fill them up with vermicelli noodles annd extra veg (cucumber,  grated carrot etc). We put all the ingredients on the table and everyone loves putting their own together.  Thx for a great recipe tmrc_emoticons.)

    I first made these about two years ago in my Bellini and have since made them several times in my Thermomix - wonderful recipe!!!  I love the dipping sauce, I use it as a salad dressing all the time tmrc_emoticons.)

    Great flavours, kids love this meal. I added some vermicilli rice noodles and bean sprouts to our's before wrapping.. yummy!!

    This is so simple, yet, the flavours are amazing!!!!! So fresh and healthy!!!  I found warm water for rice paper to work better than boiling, also I used soy sauce not fish sauce.  Loved it, so much!   Thank you for sharing!! Big Smile Love Love
