Ingredients
Curry
- 1-2 cloves garlic
- 1 medium onion
- 1 can coconut milk, Ayam has the least additives
- 2-3 heaped tablespoons Curry paste, of your preference
- 600-700 grams Mixed vegetables chopped, your choice e.g. zucchini, broccoli, eggplant, muchroom
- 20 grams olive oil, or oil of choice

Place garlic in TM bowl for 3 sec., speed 7.
Slice onion into halves and then into 8 pieces. Place onion into bowl with olive oil. Cook 3min, varoma, speed 1
Add 60g of coconut milk, with the curry paste & cook 2 min, varoma, "Gentle stir setting"
Add veg and rest of coconut milk.
Cook for 8 min, "Counter-clockwise operation" , 100 degrees, speed 1.
Serve on rice and garnish with chillis

Tip
Too easy vegetable curry! You can use any veggie staples you've got in the fridge and any curry paste you like. A simple conversion of a basic curry that any one can make in a flash.
I love cooking this with a red, green or penang curry paste - but it works great with any!
I always prep my veggies whilst the other is cooking, so put the garlic and onion on to cook and cut up the veg. The cooking time is 15 min and prep 5 - but when working it on, takes 15 min total.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Such a great, tasty, easy curry. I used some tikka curry paste I had lying around and a whole 470ml can of Ayam coconut milk.
Also put sweet potato in but steamed it for 10 mins first. Did a bit more than 8 minutes at the end too. Sweet potato was a bit tough first up but leftovers the next night were perfect!
This didn't work for me firstly because I didn't know the volume of liquid to add as I didn't have the Ayam can at home so used another, presumably much different volume, can so then added what turned out to be too much water so I ended up turning the leftovers into soup. I'll try again to see if I can get the balance right. Thank you for the recipe.
Love this recipe, thank you! Have made this a couple of times now, with whatever veggies I have on hand & Tikka Masala curry paste. Have also added fish pieces near the end of cooking time to make a fish curry. Yum! It will be a regular meal in our house. (I used a TM 31)

Really quick and easy and tastes yummy! I cooked the vegies for about 5 minutes longer.
